A comforting cabbage soup made with smoked meat and potatoes, perfect for a chilly day.

Ingredients

  • 1 head cabbage
  • 8 oz smoked sausage
  • 2 large potatoes
  • 2 medium carrots
  • 1 large onion
  • 3 cloves garlic
  • 2 leaves bay leaves
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons fresh parsley

    Prepare the ingredients: Chop the cabbage into thin strips, dice the smoked sausage, peel and cube the potatoes, slice the carrots, dice the onion, and mince the garlic.

    In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent.

    Add the minced garlic and diced smoked sausage to the pot. Cook for another 3-4 minutes until the sausage is slightly browned.

    Stir in the chopped cabbage and sliced carrots. Cook for 5 minutes, stirring occasionally, until the cabbage begins to wilt.

    Add the cubed potatoes, vegetable broth, bay leaves, salt, and black pepper. Bring the mixture to a boil.

    Once boiling, reduce the heat to low and cover the pot. Simmer for 30-35 minutes, or until the potatoes and carrots are tender.

    Remove the bay leaves and adjust seasoning if necessary. Stir in the fresh parsley just before serving.

    Serve hot, garnished with additional parsley if desired.
