Zelňačka
A flavorful cabbage soup with smoked meat, a warm dish that is a staple in Czech cuisine.
Ingredients
- 1 head cabbage
- 1 pound smoked meat
- 2 medium potatoes
- 2 medium carrots
- 1 large onion
- 1 teaspoon black pepper
- 6 cups water
- 2 leaves bay leaves
- 1 teaspoon salt
- 2 tablespoons vegetable oil
- 2 cloves garlic
- 1 tablespoon dill

Begin by chopping the onion, carrots, and garlic. Dice the potatoes and shred the cabbage.

In a large pot, heat 2 tablespoons of vegetable oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent.

Add the chopped carrots and garlic to the pot. Sauté for an additional 3-4 minutes until the carrots soften.

Introduce the smoked meat to the pot and cook for 5 minutes, stirring occasionally.

Pour in 6 cups of water and add the diced potatoes, shredded cabbage, bay leaves, black pepper, and salt.

Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 30 minutes, or until the cabbage and potatoes are tender.

Once cooked, remove the bay leaves and stir in 1 tablespoon of fresh dill for added flavor.
