
Yam Woon Sen - Spicy Glass Noodle Salad Soup
A refreshing soup salad with glass noodles, shrimp, and a spicy lime dressing, perfect for a light meal.
Ingredients
- 4 oz glass noodles
- 1 lb shrimp
- 3 tbsp lime juice
- 2 tbsp fish sauce
- 2 whole Thai chili
- 1 cup coriander leaves
- 1 medium red onion
- 1 medium cucumber
- 2 cloves garlic
- 1 medium carrot
- 4 cups vegetable broth
- 1 tbsp soy sauce
- 1 tbsp peanut oil
- 1 tsp salt
- 1 tsp black pepper

Soak the glass noodles in warm water for 15-20 minutes until softened. Drain and set aside.

In a medium pot, bring 4 cups of vegetable broth to a boil. Add the shrimp and cook for 2-3 minutes until pink and opaque. Remove shrimp and set aside.

In the same pot, add the soaked glass noodles to the broth and cook for 2-3 minutes until heated through. Drain and set aside.

Thinly slice the red onion, cucumber, and carrot. Mince the garlic and finely chop the Thai chili.

In a large bowl, combine the lime juice, fish sauce, soy sauce, peanut oil, minced garlic, chopped Thai chili, salt, and black pepper to create the dressing.

Add the drained noodles, cooked shrimp, sliced red onion, cucumber, and carrot to the dressing. Toss gently to combine.

Garnish with fresh coriander leaves before serving.

Serve immediately in bowls, optionally with additional lime wedges on the side.
