Welsh Rarebit with Grilled Tomatoes

Ingredients

  • 8 oz cheddar cheese
  • 4 slices bread
  • 1 cup beer
  • 1 tbsp mustard
  • 1 tbsp Worcestershire sauce
  • 2 medium tomatoes
  • 2 tbsp butter
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 tbsp fresh parsley

    Preheat your grill or broiler to high heat (around 500°F).

    In a medium saucepan over low heat, melt 2 tablespoons of butter.

    Once the butter is melted, add 8 oz of grated cheddar cheese, 1 cup of beer, 1 tablespoon of mustard, 1 tablespoon of Worcestershire sauce, 1 teaspoon of black pepper, and 1 teaspoon of paprika. Stir continuously until the cheese is fully melted and the mixture is smooth.

    While the cheese mixture is melting, slice the 2 medium tomatoes in half and place them on a baking tray, cut side up. Season with a pinch of salt and pepper.

    Place the tomatoes under the grill for about 5-7 minutes, or until they are slightly charred and softened.

    While the tomatoes are grilling, toast the 4 slices of bread until golden brown.

    Once the cheese mixture is ready and the bread is toasted, spoon the melted cheese generously over each slice of bread.

    Return the cheesy toast to the grill for an additional 2-3 minutes until the cheese is bubbly and slightly browned.
