Vegetarian Full English Breakfast
A vegetarian twist on the classic full English, featuring plant-based sausages and grilled vegetables.
Ingredients
- 4 pieces vegetarian sausages
- 4 large eggs
- 8 ounces mushrooms
- 2 large tomatoes
- 4 ounces spinach
- 4 slices bread
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 tablespoon butter

Preheat your oven to 400°F (200°C).

Place the vegetarian sausages on a baking tray and drizzle with 1 tablespoon of olive oil. Bake in the preheated oven for 20 minutes, turning halfway through.

While the sausages are baking, clean and slice the mushrooms. Cut the tomatoes in half.

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced mushrooms and cook for about 5 minutes until they are golden brown, stirring occasionally.

Add the halved tomatoes to the skillet, cut side down, and cook for an additional 3-4 minutes until they are slightly softened.

Add the spinach to the skillet and stir for 1-2 minutes until wilted. Season with salt and black pepper to taste. Remove from heat and set aside.

In a separate pan, melt the butter over medium heat. Crack the eggs into the pan and cook to your desired doneness (sunny-side up, over-easy, etc.), about 3-5 minutes.

While the eggs are cooking, toast the bread slices until golden brown.

Once everything is ready, plate the vegetarian sausages, eggs, mushrooms, tomatoes, spinach, and toast. Serve hot.
