
Vegan Soupe de Mâche
A unique vegan soup made from lamb's lettuce, blended with potatoes for a smooth and fresh flavor, perfect for a light meal.
Ingredients
- 4 cups lamb's lettuce
- 2 medium potatoes
- 1 medium onion
- 4 cups vegetable broth
- 1 cup coconut cream
- 1 whole lemon
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 pinch nutmeg

Rinse the lamb's lettuce thoroughly under cold water and set aside to drain.

Peel and dice the potatoes into small cubes (about 1-inch).

Chop the onion finely.

In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent.

Add the diced potatoes to the pot and stir for another 2 minutes.

Pour in 4 cups of vegetable broth and bring to a boil. Reduce heat and let it simmer for about 15 minutes, or until the potatoes are tender.

Once the potatoes are cooked, add the rinsed lamb's lettuce to the pot and cook for an additional 5 minutes until wilted.

Remove the pot from heat and allow to cool slightly before blending.

Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup in batches to a blender.

Stir in 1 cup of coconut cream and season with salt, black pepper, and a pinch of nutmeg. Squeeze in the juice of 1 whole lemon and mix well.

Return the soup to the pot and heat gently over low heat for about 5 minutes, stirring occasionally.
