Vegan miso ramen
A vegan ramen with JustEGG and Juicy Marbles meaty meat
Ingredients
- 2 stalks Celery
- 1 cup Just Egg
- 4 oz Ramen Noodles
- 1 medium Carrot
- 1 large Leek
- 1 leaf Bay Leaf
- 1 medium Onion
- 3 cloves Garlic
- 3 tablespoons Red Miso
- 2 tablespoons Soy Sauce
- 8 oz Juicy Marbles meat
- 4 cups Vegetable Broth
- 2 stalks Green Onions
- 1 tablespoon Sesame Oil
- 2 cups Spinach

Start by preparing the broth. In a large pot, heat 1 tablespoon of sesame oil over medium heat. Add the chopped onion, leeks, celery, and carrot. Sauté for about 5-7 minutes until softened.

Add minced garlic and bay leaf to the pot, cooking for an additional 1-2 minutes until fragrant.

Pour in 4 cups of vegetable broth and bring the mixture to a boil. Once boiling, reduce heat and stir in 3 tablespoons of red miso and 2 tablespoons of soy sauce until fully dissolved.

Add the ramen noodles to the pot and cook according to package instructions, usually about 4-5 minutes. Stir occasionally to prevent sticking.

While the noodles are cooking, in a separate pan, heat the Juicy Marbles meat over medium heat until browned, about 5-7 minutes. Set aside.

Once the noodles are cooked, add the spinach to the pot and cook for an additional 1-2 minutes until wilted. Remove the pot from heat.

In a small bowl, prepare the Just Egg according to the package instructions. This usually involves shaking the container and pouring it into a non-stick pan over medium heat, stirring gently until scrambled.

To serve, divide the ramen and broth into bowls. Top each bowl with the sautéed Juicy Marbles meat, scrambled Just Egg, and garnish with sliced green onions.
