Vegan Italian Sausage and Peppers
Savory vegan sausage sautéed with bell peppers and onions, served on a crusty roll for a hearty sandwich.
Ingredients
- 4 links vegan sausage
- 2 medium bell peppers
- 1 large onion
- 2 tablespoons olive oil
- 3 cloves garlic
- 1 tablespoon Italian seasoning
- 4 pieces sub rolls
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon red pepper flakes
- 1 cup fresh basil

Start by slicing the vegan sausage links into bite-sized pieces.

Wash and slice the bell peppers into thin strips. Chop the onion into thin slices.

Mince the garlic cloves.

In a large skillet, heat 2 tablespoons of olive oil over medium heat (about 350°F).

Add the sliced vegan sausage to the skillet and sauté for 5-7 minutes until browned.

Add the sliced bell peppers and onion to the skillet. Cook for an additional 5 minutes, stirring occasionally.

Stir in the minced garlic, Italian seasoning, salt, black pepper, and red pepper flakes. Cook for another 2-3 minutes until the garlic is fragrant.

While the mixture is cooking, preheat the oven to 350°F (175°C) and place the sub rolls on a baking sheet.

Toast the sub rolls in the oven for about 5 minutes until they are slightly crispy.

Once the sausage and pepper mixture is ready, remove it from the heat and stir in the fresh basil.
