Vegan Gnocchi with Tomato and Basil Sauce
Soft potato gnocchi served with a fresh tomato and basil sauce for a comforting Italian dish.
Ingredients
- 16 oz potato gnocchi
- 4 medium fresh tomatoes
- 1 cup fresh basil
- 2 tbsp olive oil
- 4 cloves garlic
- 1 tsp sea salt
- 1 tsp black pepper
- 1 tsp red pepper flakes
- 2 tbsp nutritional yeast
- 1 cup vegan parmesan (optional)

Bring a large pot of salted water to a boil over high heat.

While the water is heating, prepare the sauce. Dice the fresh tomatoes and mince the garlic.

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.

Add the diced tomatoes to the skillet and stir. Cook for about 5-7 minutes until the tomatoes start to break down.

Add 1 teaspoon of sea salt, 1 teaspoon of black pepper, and 1 teaspoon of red pepper flakes to the sauce. Stir and let it simmer for an additional 5 minutes.

Once the water is boiling, add the potato gnocchi. Cook according to package instructions, usually about 2-3 minutes or until they float to the surface.

Reserve 1/2 cup of the pasta cooking water, then drain the gnocchi.

Add the cooked gnocchi to the skillet with the tomato sauce. Toss gently to combine, adding reserved pasta water as needed to reach the desired sauce consistency.

Tear the fresh basil leaves and add them to the skillet. Stir in 2 tablespoons of nutritional yeast for a cheesy flavor.

Serve hot, garnished with additional fresh basil and vegan parmesan if desired.
