Vegan French Onion Soup
A delicious and hearty vegan take on the classic French onion soup, perfect for lunch.
Ingredients
- 4 medium onions
- 4 cloves garlic
- 2 leaf bay leaf
- 2 tablespoons olive oil
- 4 cups vegetable broth
- 1 cup dry white wine
- 1 teaspoon thyme
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 tablespoon balsamic vinegar
- 4 slices French bread
- 1 cup vegan cheese

Begin by slicing the onions thinly. Aim for about 1/8-inch thickness for even caramelization.

In a large pot, heat 2 tablespoons of olive oil over medium heat. Once hot, add the sliced onions.

Cook the onions for about 30-35 minutes, stirring frequently, until they are deep golden brown and caramelized.

Add the minced garlic to the onions and cook for an additional 2 minutes, stirring constantly to avoid burning.

Pour in the dry white wine and cook for about 5 minutes, scraping up any brown bits from the bottom of the pot.

Add the vegetable broth, bay leaves, thyme, salt, and black pepper. Bring the mixture to a boil, then reduce to a simmer.

Let the soup simmer uncovered for 20-30 minutes. Adjust seasoning with additional salt and pepper if needed.
