Vegan french onion soup
Ingredients
- 2 tablespoons Olive oil
- 4 medium Yellow onions
- 4 cloves Garlic cloves
- 4 cups Vegetable broth
- 2 tablespoons Tomato paste
- 1 teaspoon Dried thyme
- 1 leaf Bay leaf
- 1 teaspoon Salt
- 1 teaspoon Black pepper
- 1 whole Baguette
- 1 cup Vegan cheese
- 2 tablespoons Fresh parsley

Heat olive oil in a large pot over medium heat.

Slice the yellow onions and add them to the pot. Cook, stirring occasionally, for about 20-25 minutes until they are caramelized and golden brown.

Mince the garlic cloves and add them to the pot. Cook for an additional 2 minutes until fragrant.

Stir in the tomato paste, dried thyme, bay leaf, salt, and black pepper.

Pour in the vegetable broth and bring to a simmer. Reduce heat and let it cook for 20 minutes.

While the soup simmers, slice the baguette into 1-inch thick slices and toast them until golden brown.

Remove the bay leaf from the soup and ladle the soup into bowls.

Top each bowl with a slice of toasted baguette and sprinkle with vegan cheese.

Place the bowls under the broiler for 2-3 minutes until the cheese is melted and bubbly.
