Vegan Cauliflower Steak with Chimichurri
Thick cauliflower steaks grilled and topped with a fresh chimichurri sauce for a bold and flavorful dish.
Ingredients
- 1 head cauliflower
- 4 tablespoons olive oil
- 1 cup parsley
- 1 cup cilantro
- 3 cloves garlic
- 1 teaspoon red pepper flakes
- 3 tablespoons red wine vinegar
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 tablespoons lemon juice
- 1 teaspoon smoked paprika

Preheat your grill to medium-high heat (about 400°F).

Remove the leaves from the cauliflower and trim the stem. Cut the cauliflower into 1-inch thick steaks, ensuring you get at least 4 good pieces.

In a small bowl, mix 2 tablespoons of olive oil, smoked paprika, salt, and black pepper. Brush this mixture onto both sides of the cauliflower steaks.

Place the cauliflower steaks on the grill and cook for about 5-7 minutes on each side, until they are tender and have nice grill marks.

While the steaks are grilling, prepare the chimichurri sauce. Finely chop the parsley, cilantro, and garlic, and combine them in a bowl.

Add the remaining 2 tablespoons of olive oil, red wine vinegar, red pepper flakes, and lemon juice to the herb mixture. Stir well to combine.
