
Vegan Breakfast Burrito with Black Beans
A flavorful breakfast burrito stuffed with black beans, avocado, and fresh vegetables wrapped in a tortilla, perfect for a nutritious start to your day.
Ingredients
- 2 large tortilla
- 1 cup black beans
- 1 medium avocado
- 1 medium tomato
- 1 cup cilantro
- 1 medium lime
- 1 small red onion
- 1 medium bell pepper
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon cumin
- 1 teaspoon garlic powder

Heat the olive oil in a medium skillet over medium heat (about 350°F).

Add the diced red onion and bell pepper to the skillet. Sauté for about 5 minutes until softened.

Add the black beans, cumin, garlic powder, salt, and black pepper to the skillet. Stir well and cook for an additional 3-4 minutes until heated through.

While the bean mixture is cooking, dice the avocado and tomato. Chop the cilantro finely.

Once the bean mixture is done, remove it from heat. Squeeze the juice of half the lime into the mixture and stir to combine.

To assemble the burritos, lay a tortilla flat on a clean surface. Spoon half of the bean mixture onto the center of the tortilla.

Top the bean mixture with diced avocado, tomato, and chopped cilantro.

Fold in the sides of the tortilla and then roll it up from the bottom to create a burrito. Repeat with the second tortilla.

If desired, place the burritos seam-side down in the skillet and toast for 2-3 minutes on each side until golden brown.

Serve warm with lime wedges and additional cilantro for garnish.
