Vegan BBQ Jackfruit Sandwiches
Pulled jackfruit simmered in BBQ sauce served on a bun, reminiscent of classic pulled pork sandwiches.
Ingredients
- 2 cans (20 oz each) young green jackfruit
- 1 cup BBQ sauce
- 4 pieces buns
- 2 cups, shredded cabbage
- 1 cup, shredded carrots
- 2 tablespoons apple cider vinegar
- 1 4 oz vegan mayo
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika

Drain and rinse the jackfruit under cold water. Remove the core and seeds, and shred the jackfruit pieces with your hands or a fork until they resemble pulled meat.

In a large skillet, heat the olive oil over medium heat. Add the shredded jackfruit, salt, black pepper, garlic powder, onion powder, and smoked paprika. Sauté for about 5 minutes until the jackfruit is lightly browned.

Pour in the BBQ sauce, stirring to coat the jackfruit evenly. Reduce the heat to low, cover, and simmer for 20 minutes, stirring occasionally.

While the jackfruit simmers, prepare the coleslaw. In a large bowl, combine the shredded cabbage, shredded carrots, apple cider vinegar, and vegan mayo. Mix well until the vegetables are evenly coated. Season with salt and pepper to taste.

After 20 minutes, remove the jackfruit from heat. Taste and adjust seasoning if necessary.

To assemble the sandwiches, place a generous portion of the BBQ jackfruit on each bun, followed by a scoop of coleslaw on top.
