
Tom Yum Goong - Spicy Shrimp Soup
A classic Thai soup with a spicy and sour flavor profile, featuring fresh shrimp and aromatic herbs.
Ingredients
- 1 pound shrimp
- 2 stalks lemongrass
- 5 leaves kaffir lime leaves
- 1 inch galangal
- 3 chili Thai bird's eye chili
- 3 tablespoons lime juice
- 3 tablespoons fish sauce
- 1 cup coriander leaves
- 1 cup mushrooms
- 1 cup cherry tomatoes
- 4 cups water
- 1 teaspoon salt

Prepare the ingredients: peel and devein the shrimp, slice the lemongrass into 2-inch pieces, bruise the galangal, and halve the cherry tomatoes.

In a large pot, bring 4 cups of water to a boil over medium-high heat.

Add the sliced lemongrass, bruised galangal, and kaffir lime leaves to the boiling water. Let it simmer for 5 minutes to infuse the flavors.

Add the mushrooms and cherry tomatoes to the pot. Continue to simmer for another 5 minutes.

Add the shrimp to the pot and cook for approximately 3-4 minutes, or until the shrimp turn pink and opaque.

Stir in the fish sauce, lime juice, and salt. Adjust seasoning to taste.

Remove the pot from heat and stir in the fresh coriander leaves.

Serve hot, garnished with additional coriander leaves and slices of lime if desired.
