
Tartiflette Végétalienne
A rich and cheesy potato dish from the Alps, made with vegan cheese and savory onions for a comforting meal.
Ingredients
- 2 pounds potatoes
- 8 ounces vegan cheese
- 2 medium onions
- 2 tablespoons olive oil
- 3 cloves garlic
- 1 teaspoon thyme
- 1 cup vegetable broth
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 pinch nutmeg

Preheat your oven to 375°F (190°C).

Wash and peel the potatoes, then slice them into thin rounds (about 1/8 inch thick).

In a large pot, bring salted water to a boil. Add the potato slices and cook for about 5-7 minutes until slightly tender but not fully cooked. Drain and set aside.

While the potatoes are boiling, heat the olive oil in a large skillet over medium heat. Add the diced onions and cook for about 5 minutes until they become translucent.

Add minced garlic to the skillet with the onions and cook for an additional 1-2 minutes until fragrant.

Stir in the thyme, salt, black pepper, and nutmeg. Mix well and remove from heat.

In a large baking dish, layer half of the potato slices on the bottom. Top with half of the onion mixture and half of the vegan cheese, then repeat the layers.

Pour the vegetable broth evenly over the layered potatoes, onions, and cheese.

Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.

After 25 minutes, remove the foil and bake for an additional 15-20 minutes until the top is golden and bubbly.

Remove from the oven and let it cool for 5-10 minutes before serving.
