
Sweet and Sour Pork (糖醋里脊)
Crispy pork stir-fried with bell peppers and pineapple in a tangy sweet and sour sauce.
Ingredients
- 1 pound pork tenderloin
- 1 cup pineapple chunks
- 1 medium red bell pepper
- 1 medium green bell pepper
- 1 cup vinegar
- 1 cup sugar
- 1 tablespoon soy sauce
- 1 cup cornstarch
- 1 cup vegetable oil
- 2 cloves garlic
- 1 tablespoon ginger
- 1 cup water
- 2 stalks green onions
- 1 teaspoon salt
- 1 teaspoon black pepper

Slice the pork tenderloin into thin strips, about 1/2 inch wide. Season with salt and black pepper.

In a bowl, mix the cornstarch with the pork strips until well coated. Let it sit for 10 minutes.

Heat 1/2 cup of vegetable oil in a large skillet or wok over medium-high heat until shimmering.

Add the coated pork strips to the hot oil in batches, frying for about 3-4 minutes until golden brown and crispy. Remove and drain on paper towels.

In the same skillet, add the remaining 1/2 cup of vegetable oil. Add minced garlic and grated ginger, sautéing for 30 seconds until fragrant.

Add sliced red and green bell peppers and pineapple chunks to the skillet. Stir-fry for about 2-3 minutes until the vegetables are slightly tender.

In a small bowl, mix together vinegar, sugar, soy sauce, and water. Pour this mixture into the skillet, stirring well to combine.

Bring the sauce to a simmer and let it cook for about 3-4 minutes until slightly thickened.

Return the fried pork to the skillet, tossing it in the sauce until well coated. Cook for an additional 2 minutes.

Garnish with chopped green onions before serving.
