
Steamed Fish with Herbs
Delicate fish steamed with fresh herbs and spices, a light and fragrant Caribbean dish.
Ingredients
- 2 pounds whole fish
- 2 tablespoons fresh thyme
- 4 stalks scallions
- 2 whole lime
- 4 cloves garlic
- 1 teaspoon black pepper
- 1 teaspoon salt
- 2 tablespoons olive oil
- 2 tablespoons fresh parsley
- 2 cups water

Rinse the whole fish under cold water and pat dry with paper towels.

In a small bowl, mix together the salt, black pepper, and olive oil. Rub this mixture all over the fish, including inside the cavity.

Slice the lime in half. Squeeze the juice of one half over the fish, and reserve the other half for garnish. Stuff the fish's cavity with fresh thyme, sliced scallions, and crushed garlic cloves.

Fill a large pot with 2 cups of water and bring it to a simmer over medium heat. Place a steaming rack or basket inside the pot.

Once the water is simmering, carefully place the fish on the steaming rack. Cover the pot with a lid and steam the fish for 15-20 minutes, or until the fish is opaque and flakes easily with a fork.

While the fish is steaming, chop the fresh parsley and set aside.

Once the fish is cooked, carefully remove it from the pot and transfer it to a serving platter. Garnish with the remaining lime half and sprinkle with chopped parsley.

Serve immediately with additional lime wedges and a side of steamed vegetables or rice.
