
Steamed Banana & Date Pudding with Coconut Sauce
Soft and moist banana pudding enriched with dates, served with a luscious coconut sauce for a comforting vegan dessert.
Ingredients
- 3 medium ripe bananas
- 1 cup dates
- 1 cup almond flour
- 1 cup coconut milk
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- 1 tablespoon coconut sugar
- 1 pinch salt
- 1 tablespoon shredded coconut
- 2 cups water

Prepare the dates by pitting and chopping them into small pieces. Set aside.

In a large mixing bowl, mash the ripe bananas until smooth.

Add the chopped dates, almond flour, baking powder, vanilla extract, coconut sugar, and a pinch of salt to the mashed bananas. Mix well until fully combined.

Gradually stir in the coconut milk until the mixture is smooth and well combined.

Prepare a steaming setup by filling a large pot with 2 cups of water and bringing it to a boil. Place a steamer basket or a heatproof dish inside the pot, ensuring it doesn't touch the water.

Pour the banana and date mixture into a greased heatproof dish or individual ramekins, filling them about 2/3 full.

Cover the dish or ramekins with aluminum foil to prevent water from dripping onto the pudding.

Carefully place the dish or ramekins in the steamer basket. Cover the pot with a lid and steam for 25-30 minutes, or until a toothpick inserted in the center comes out clean.

While the pudding is steaming, prepare the coconut sauce by combining 1 cup of coconut milk and 1 tablespoon of shredded coconut in a small saucepan over medium heat. Stir and simmer for 5-7 minutes until slightly thickened.

Once the pudding is done, remove it from the steamer and let it cool for a few minutes before serving.
