Instructions
- 1
Prepare the ribs by removing the membrane from the back of the ribs. Pat them dry with paper towels.
- 2
In a bowl, combine the dry rub, black pepper, salt, garlic powder, and onion powder. Mix well.
- 3
Generously apply the dry rub mixture all over the ribs, ensuring they are well coated. Wrap the ribs in plastic wrap and refrigerate for at least 2 hours, or overnight for better flavor.
- 4
Preheat your smoker to 225°F (107°C).
- 5
Soak the wood chips in water for at least 30 minutes, then drain them.
- 6
Place the wood chips in the smoker box or directly on the coals.
- 7
Once the smoker is ready, place the ribs on the grill grates bone side down. Close the lid and smoke for 3 hours.
- 8
After 3 hours, prepare a foil wrap: lay out a large piece of aluminum foil, and place the ribs on the foil. Drizzle with apple juice and honey, then wrap tightly.
- 9
Return the wrapped ribs to the smoker and cook for an additional 2 hours.
- 10
After 2 hours, carefully unwrap the ribs and brush them with barbecue sauce. Place them back in the smoker for 30 minutes to set the sauce.
- 11
Remove the ribs from the smoker and let them rest for 10 minutes before slicing.
- 12
Serve the ribs with additional barbecue sauce on the side.
