Spicy Vegan Tacos with Lentil Filling
Enjoy these tacos filled with a flavorful lentil mixture spiced with cumin and topped with fresh avocado.
Ingredients
- 1 cup lentils
- 6 pieces corn tortillas
- 1 teaspoon cumin
- 1 whole lime
- 1 whole avocado
- 1 bunch cilantro
- 1 medium onion
- 2 cloves garlic
- 2 tablespoons olive oil
- 2 cups vegetable broth
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon chili powder
- 1 whole jalapeño

Rinse the lentils under cold water and drain them well.

In a medium saucepan, heat 2 tablespoons of olive oil over medium heat.

Add 1 medium diced onion and sauté for about 5 minutes until translucent.

Add 2 minced garlic cloves and 1 diced jalapeño (optional for heat) to the onions, and cook for another 2 minutes.

Stir in the rinsed lentils, 2 cups of vegetable broth, 1 teaspoon of cumin, 1 teaspoon of chili powder, 1 teaspoon of salt, and 1 teaspoon of black pepper.

Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 25-30 minutes, or until the lentils are tender.

While the lentils are cooking, prepare the toppings: dice 1 avocado and chop 1 bunch of cilantro.

Once the lentils are cooked, remove them from heat and squeeze the juice of 1 lime into the mixture, stirring well.

Warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side.

To assemble the tacos, spoon the lentil filling onto each tortilla and top with diced avocado and chopped cilantro.
