Spicy Tofu Scramble with Peppers
A vibrant, protein-rich tofu scramble seasoned with spices and packed with colorful bell peppers. Perfect for a hearty vegan breakfast.
Ingredients
- 14 oz firm tofu
- 1 cup bell peppers
- 1 medium onion
- 1 tsp turmeric
- 1 tsp cumin
- 2 tbsp olive oil
- 2 cloves garlic
- 2 cups spinach
- 1 tsp salt
- 1 tsp black pepper
- 2 tbsp nutritional yeast

Prepare the ingredients: Drain the firm tofu and press it gently to remove excess moisture. Crumble the tofu into bite-sized pieces and set aside.

Chop the onion and bell peppers into small, even pieces. Mince the garlic cloves.

Heat 2 tablespoons of olive oil in a large skillet over medium heat (about 350°F).

Add the chopped onion to the skillet and sauté for 3-4 minutes until translucent.

Add the minced garlic and chopped bell peppers to the skillet. Cook for an additional 3-4 minutes until the peppers soften.

Stir in the crumbled tofu, turmeric, cumin, salt, and black pepper. Cook for 5-7 minutes, stirring occasionally, until the tofu is heated through and slightly golden.

Add the spinach and nutritional yeast to the skillet. Cook for another 2-3 minutes until the spinach wilts.

Taste and adjust seasoning if necessary. Serve hot, garnished with fresh herbs if desired.
