Spicy Chipotle Lentil Tacos with Avocado Salsa
Flavorful lentil tacos infused with spicy chipotle, topped with a fresh avocado salsa.
Ingredients
- 1 cup lentils
- 2 pieces chipotle peppers in adobo sauce
- 8 pieces taco shells
- 2 pieces avocado
- 1 cup tomato
- 1 cup cilantro
- 1 piece lime
- 1 medium onion
- 2 cloves garlic
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon salt
- 1 teaspoon black pepper
- 3 cups water

Rinse 1 cup of lentils under cold water in a fine mesh strainer.

In a medium saucepan, combine the rinsed lentils and 3 cups of water. Bring to a boil over medium-high heat.

Once boiling, reduce heat to low, cover, and simmer for about 20-25 minutes until lentils are tender but not mushy.

While lentils are cooking, finely chop 1 medium onion and 2 cloves of garlic.

In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and garlic, sauté for 5-7 minutes until the onion is translucent.

Chop 2 chipotle peppers in adobo sauce and add them to the skillet along with 1 teaspoon of cumin, 1 teaspoon of salt, and 1 teaspoon of black pepper. Stir well and cook for an additional 2 minutes.

Drain the cooked lentils and add them to the skillet. Stir to combine and cook for another 5 minutes, allowing the flavors to meld.

While the lentil mixture is cooking, prepare the avocado salsa. Dice 2 avocados and 1 cup of tomato. Finely chop 1 cup of cilantro and combine them in a bowl.

Squeeze the juice of 1 lime over the avocado salsa mixture and gently toss to combine. Season with salt to taste.

Preheat taco shells according to package instructions (usually about 5-7 minutes in the oven).

Once taco shells are heated, fill each shell with the spicy lentil mixture and top with the avocado salsa.
