
Spiced Sweet Potato & Chocolate Tart with Almond Crust
A delicious tart featuring a creamy sweet potato and chocolate filling, encased in a crunchy almond crust.
Ingredients
- 2 medium sweet potatoes
- 1 cup cocoa powder
- 1 cup almond flour
- 1 3/4 cup maple syrup
- 1 1/4 cup coconut oil
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1 1/4 teaspoon ground nutmeg
- 1 1/2 teaspoon sea salt
- 1 1/4 cup almond milk
- 4 oz dark chocolate (vegan)
- 1 1/4 cup toasted almonds (for garnish)

Preheat your oven to 350°F (175°C).

Peel and chop the sweet potatoes into cubes. Boil in a pot of water for about 15-20 minutes, or until tender. Drain and let cool.

In a mixing bowl, combine almond flour, cocoa powder, ground cinnamon, sea salt, and melted coconut oil. Mix well until crumbly.

Press the almond flour mixture into the bottom and up the sides of a tart pan (9-inch). Bake in the preheated oven for 10-12 minutes until slightly golden. Remove from oven and let cool.

In a blender, combine the cooled sweet potatoes, maple syrup, almond milk, vanilla extract, ground nutmeg, and melted dark chocolate. Blend until smooth and creamy.

Pour the sweet potato and chocolate filling into the cooled almond crust, smoothing the top with a spatula.

Bake the tart in the oven for an additional 25-30 minutes, or until the filling is set. Let cool at room temperature.

Once cooled, refrigerate the tart for at least 1 hour before serving.
