
Soupe de Lentilles Vertes
A nutritious green lentil soup, simmered with vegetables and herbs for a hearty meal.
Ingredients
- 1 cup green lentils
- 2 medium carrots
- 2 stalks celery
- 1 medium onion
- 2 cloves garlic
- 1 teaspoon thyme
- 1 leaf bay leaf
- 4 cups vegetable broth
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 cups spinach
- 1 tablespoon lemon juice

Rinse the green lentils under cold water and set them aside.

Dice the onion, carrots, and celery into small pieces.

In a large pot, heat 2 tablespoons of olive oil over medium heat.

Add the diced onion, carrots, and celery to the pot. Sauté for about 5-7 minutes until the vegetables are softened.

Mince the garlic and add it to the pot. Cook for an additional 1-2 minutes until fragrant.

Add the rinsed green lentils, thyme, bay leaf, vegetable broth, salt, and black pepper to the pot.

Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 30-35 minutes, or until the lentils are tender.

Stir in the spinach and lemon juice. Cook for an additional 5 minutes until the spinach wilts.

Remove the bay leaf, taste, and adjust the seasoning if necessary.
