
Soupe de Céleri-Rave
A unique celery root soup, creamy and comforting, garnished with crispy celery leaves for texture. Perfect for a cozy meal.
Ingredients
- 1 medium celery root
- 2 medium potatoes
- 1 large onion
- 4 cups vegetable broth
- 1 cup coconut cream
- 1 teaspoon nutmeg
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 cup celery leaves

Peel and dice the celery root, potatoes, and onion into small, even pieces.

In a large pot, heat 2 tablespoons of olive oil over medium heat.

Add the diced onion and sauté for 5 minutes until translucent.

Add the diced celery root and potatoes to the pot. Sauté for an additional 5 minutes, stirring occasionally.

Pour in 4 cups of vegetable broth, ensuring the vegetables are fully submerged.

Bring the mixture to a boil, then reduce the heat to low and simmer for 20 minutes, or until the vegetables are tender.

Remove the pot from heat and use an immersion blender to puree the soup until smooth. Alternatively, transfer to a blender in batches.

Stir in 1 cup of coconut cream, 1 teaspoon of nutmeg, and season with salt and black pepper to taste.

For garnish, heat a small amount of olive oil in a pan over medium heat. Add the celery leaves and fry for 1-2 minutes until crispy.
