
Sopes de Frijoles
Thick corn masa rounds topped with refried beans, lettuce, crema, and salsa, a simple yet delightful dish.
Ingredients
- 2 cups masa harina
- 1 cup water
- 2 cups refried beans
- 1 cup lettuce
- 1 cup crema
- 1 cup salsa
- 1 cup cheese
- 1 teaspoon salt
- 1 tablespoon oil

In a large mixing bowl, combine 2 cups of masa harina and 1 teaspoon of salt. Mix well.

Gradually add 1 cup of water to the masa harina mixture, mixing with your hands until a smooth dough forms. If the dough is too dry, add more water, one tablespoon at a time.

Divide the dough into 8 equal portions and roll each into a ball. Flatten each ball into a thick round, about 1/2 inch thick.

Heat a skillet over medium heat and lightly grease it with 1 tablespoon of oil. Cook each masa round for about 2-3 minutes on each side until they are lightly browned and cooked through.

Remove the cooked masa rounds from the skillet and use your fingers to pinch the edges, creating a small border around each round.

Spread about 1/4 cup of refried beans on each masa round, filling the center.

Top the refried beans with shredded lettuce, a drizzle of crema, and a spoonful of salsa.

Sprinkle shredded cheese on top of the assembled sopes.

Serve immediately while warm, with extra salsa on the side if desired.
