Sopa de Lima
A refreshing lime soup from the Yucatán, featuring a zesty broth and a medley of vegetables.
Ingredients
- 1 cup lime juice
- 6 cups vegetable broth
- 1 cup bell peppers
- 1 medium onion
- 3 cloves garlic
- 1 bunch cilantro
- 1 large avocado
- 2 medium tomatoes
- 1 small jalapeño
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 cup tortilla strips

Instructions

In a large pot, heat 2 tablespoons of olive oil over medium heat.

Add 1 medium chopped onion and sauté for about 5 minutes until translucent.

Stir in 3 minced garlic cloves, 1 cup of chopped bell peppers, and 1 chopped small jalapeño. Cook for an additional 3-4 minutes.

Add 6 cups of vegetable broth and 2 chopped medium tomatoes to the pot. Bring to a boil.

Once boiling, reduce heat to low and simmer for 10 minutes.

Stir in 1 cup of lime juice, 1 teaspoon of salt, and 1 teaspoon of pepper. Simmer for another 5 minutes.

Remove from heat and add chopped cilantro from 1 bunch. Adjust seasoning if necessary.

To serve, ladle the soup into bowls and top with diced avocado and tortilla strips.

Garnish with additional cilantro if desired and serve hot.
