Smoky Vegan Breakfast Sausage Patties

Flavorful and hearty vegan sausage patties made with lentils and smoked spices for a protein-packed breakfast.

Ingredients

  • 1 cup lentils
  • 2 teaspoons smoked paprika
  • 1 medium onion
  • 1 teaspoon garlic powder
  • 1 cup all-purpose flour
  • 1 teaspoon ground black pepper
  • 1 teaspoon salt
  • 1 teaspoon ground cumin
  • 2 tablespoons nutritional yeast
  • 2 tablespoons olive oil
  • 1 cup water
  • 2 tablespoons fresh parsley

    Rinse and drain 1 cup of lentils. In a medium saucepan, combine the lentils and 1 cup of water. Bring to a boil over medium heat, then reduce to a simmer. Cover and cook for 20-25 minutes until tender.

    While the lentils are cooking, finely chop the onion. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the chopped onion and sauté for about 5-7 minutes until translucent.

    In a large mixing bowl, combine the cooked lentils, sautéed onion, smoked paprika, garlic powder, ground black pepper, salt, ground cumin, nutritional yeast, and chopped fresh parsley. Mash the mixture with a fork or potato masher until well combined but still slightly chunky.

    Add 1 cup of all-purpose flour to the lentil mixture. Stir until a dough forms. If the mixture is too wet, add more flour, a tablespoon at a time, until it holds together.

    Divide the mixture into 8 equal portions and shape each portion into a patty, about 1/2 inch thick.

    In the same skillet used for the onions, add the remaining tablespoon of olive oil. Heat over medium heat. Cook the patties for about 4-5 minutes on each side until golden brown and crispy.

    Remove the patties from the skillet and place them on a paper towel-lined plate to absorb excess oil. Serve warm as part of your breakfast.
