Ingredients

  • 3 pounds pork ribs
  • 1 cup brown sugar
  • 2 tablespoons paprika
  • 2 tablespoons smoked paprika
  • 2 cups tomato sauce
  • 1 cup apple cider vinegar
  • 1 tablespoon honey
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon cayenne pepper
  • 1 cup water
  • 2 cups wood chips (hickory or apple)

    Preheat your smoker to 225°F (107°C). Soak the wood chips in water for at least 30 minutes before using.

    In a small bowl, mix together the brown sugar, paprika, smoked paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper to create a dry rub.

    Pat the pork ribs dry with paper towels. Generously apply the dry rub all over the ribs, ensuring they are well coated. Let the ribs sit at room temperature for 30 minutes.

    While the ribs are resting, prepare the homemade BBQ sauce. In a saucepan over medium heat, combine the tomato sauce, apple cider vinegar, honey, and water. Stir well and bring to a simmer.

    Reduce the heat to low and let the sauce simmer for 20 minutes, stirring occasionally until it thickens slightly. Remove from heat and set aside.

    Once the smoker is ready, add the soaked wood chips to the smoker box. Place the ribs in the smoker, bone side down, and smoke for 3 hours at 225°F (107°C).

    After 3 hours, wrap the ribs in aluminum foil and return them to the smoker. Continue to smoke for an additional 2 hours.

    After 2 hours, carefully unwrap the ribs and brush them generously with the homemade BBQ sauce. Return the ribs to the smoker for another 30 minutes to set the sauce.

    Remove the ribs from the smoker and let them rest for 10-15 minutes before slicing. Serve with additional BBQ sauce on the side.
