
Smoked Pork Belly Bites with Apple Slaw

- 1 pound pork belly
- 1 medium apple
- 2 cups cabbage
- 1 medium carrots
- 2 tablespoons white vinegar
- 1 tablespoon honey
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 tablespoon olive oil
- 2 tablespoons fresh cilantro

Preheat your smoker to 225°F (107°C).

While the smoker is heating, prepare the pork belly. Cut the pork belly into 1-inch cubes.

In a bowl, mix together the smoked paprika, garlic powder, salt, and black pepper. Rub this spice mixture all over the pork belly cubes.

Place the seasoned pork belly cubes on a smoker rack. Smoke the pork belly for about 2 to 3 hours, or until they reach an internal temperature of 195°F (90°C) and are tender.

While the pork belly is smoking, prepare the apple slaw. Thinly slice the cabbage and grate the carrot. Dice the apple into small pieces.

In a large bowl, combine the cabbage, carrots, and apple. In a separate small bowl, whisk together the white vinegar, honey, and olive oil.

Pour the dressing over the slaw mixture and toss to combine. Let it sit for at least 15 minutes to allow the flavors to meld.

Once the pork belly is done smoking, remove it from the smoker and let it rest for 10 minutes.
