
Smoked Meatloaf with BBQ Glaze
A hearty meatloaf infused with smoky flavors and topped with a tangy barbecue glaze for a comforting meal.
Ingredients
- 2 pounds ground beef
- 1 cup breadcrumbs
- 1 medium onion
- 1 large egg
- 1 cup bbq sauce
- 2 teaspoons smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 tablespoons Worcestershire sauce
- 1 tablespoon mustard
- 1 cup smoked wood chips

Preheat your smoker to 225°F (107°C). If using a charcoal grill, prepare for indirect cooking.

Soak the smoked wood chips in water for at least 30 minutes. This will help create smoke during cooking.

In a large mixing bowl, combine 2 pounds of ground beef, 1 cup of breadcrumbs, 1 medium diced onion, 1 large egg, 1 cup of BBQ sauce, 2 teaspoons of smoked paprika, 1 teaspoon of garlic powder, 1 teaspoon of salt, 1 teaspoon of black pepper, 2 tablespoons of Worcestershire sauce, and 1 tablespoon of mustard.

Mix the ingredients thoroughly until well combined. Be careful not to overmix.

Shape the meat mixture into a loaf shape, approximately 8 inches long and 4 inches wide. Place it on a piece of parchment paper or directly on the smoker rack.

Drain the soaked wood chips and add them to the smoker box or directly onto the coals.

Place the meatloaf in the smoker and cook for about 2 to 2.5 hours, or until the internal temperature reaches 160°F (71°C).

During the last 30 minutes of cooking, brush the top of the meatloaf with additional BBQ sauce for a glaze.

Once cooked, remove the meatloaf from the smoker and let it rest for 10 minutes before slicing.
