
Smoked Meatloaf with BBQ Glaze
A hearty smoked meatloaf glazed with barbecue sauce, bringing together comfort and smoky flavors.

- 1 lb ground beef
- 1 lb ground pork
- 1 cup bread crumbs
- 1 medium, finely chopped onion
- 1 large egg
- 1 cup barbecue sauce
- 1 teaspoon garlic powder
- 2 tablespoons Worcestershire sauce
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon smoked paprika
- 1 tablespoon olive oil
- 2 cups smoking wood chips

Preheat your smoker to 250°F (121°C) using your preferred wood chips for smoking.

In a large mixing bowl, combine 1 lb ground beef, 1 lb ground pork, 1 cup bread crumbs, 1 medium finely chopped onion, 1 large egg, 1 teaspoon garlic powder, 2 tablespoons Worcestershire sauce, 1 teaspoon salt, 1 teaspoon black pepper, and 1 teaspoon smoked paprika.

Mix the ingredients until well combined, but do not overmix to keep the meatloaf tender.

Shape the meat mixture into a loaf, about 8 inches long and 4 inches wide, and place it on a piece of parchment paper.

In a small bowl, mix 1 cup barbecue sauce with a tablespoon of olive oil. Brush half of this mixture over the top of the meatloaf.

Transfer the meatloaf to the smoker and smoke for about 2 hours or until the internal temperature reaches 160°F (71°C).

During the last 30 minutes of cooking, brush the remaining barbecue sauce mixture over the meatloaf for a sticky glaze.

Once cooked, remove the meatloaf from the smoker and let it rest for 10 minutes before slicing.

Slice and serve warm, drizzled with extra barbecue sauce if desired.
