Instructions
- 1
Preheat your smoker to 225°F (107°C).
- 2
In a large bowl, combine the chicken wings with olive oil, salt, black pepper, garlic powder, onion powder, and smoked paprika. Toss until the wings are evenly coated.
- 3
Place the seasoned chicken wings on the smoker rack. Smoke the wings for 1.5 to 2 hours, or until they reach an internal temperature of 165°F (74°C).
- 4
While the wings are smoking, prepare the Carolina mustard sauce. In a medium saucepan, combine yellow mustard, apple cider vinegar, honey, brown sugar, and a pinch of salt. Cook over medium heat for 10-15 minutes, stirring occasionally, until the sauce thickens slightly.
- 5
Once the wings are done smoking, remove them from the smoker and let them rest for 5 minutes.
- 6
Toss the smoked wings in the Carolina mustard sauce until well coated.
- 7
Serve the wings hot, garnished with chopped fresh parsley, alongside extra sauce for dipping.
