Instructions
- 1
Preheat your smoker to 225°F (107°C).
- 2
In a large bowl, combine chicken wings with olive oil, salt, garlic powder, onion powder, and black pepper. Toss until the wings are evenly coated.
- 3
Place the seasoned chicken wings on the smoker rack. Smoke the wings for 1.5 to 2 hours, or until they reach an internal temperature of 165°F (74°C).
- 4
During the last 30 minutes of smoking, brush the wings with BBQ sauce to add flavor and moisture.
- 5
While the wings are smoking, prepare the blue cheese dip. In a bowl, crumble the blue cheese and mix it with sour cream and buttermilk until smooth. Adjust seasoning with salt and pepper to taste.
- 6
Chop the celery into sticks for serving alongside the wings.
- 7
Once the wings are done smoking, remove them from the smoker and let them rest for 5 minutes.
- 8
Serve the smoked chicken wings hot with the blue cheese dip and celery sticks on the side. Garnish with fresh parsley if desired.
