- 4 pounds beef short ribs
- 1 cup cherry preserves
- 1 /4 cup soy sauce
- 4 cloves garlic
- 1 teaspoon black pepper
- 1 tablespoon smoked paprika
- 1 teaspoon onion powder
- 2 tablespoons apple cider vinegar
- 2 tablespoons olive oil
- 1 tablespoon kosher salt
- 1 cup water
- 1 cup fresh cherries

Prepare the beef short ribs by trimming excess fat and patting them dry with paper towels.

In a bowl, mix together the soy sauce, garlic (minced), black pepper, smoked paprika, onion powder, apple cider vinegar, and kosher salt to create a marinade.

Rub the marinade evenly over the beef short ribs, ensuring they are well-coated. Cover and refrigerate for at least 4 hours, preferably overnight.

Preheat your smoker to 225°F (107°C).

Remove the ribs from the marinade and let them sit at room temperature for about 30 minutes before smoking.

Place the ribs in the smoker bone-side down. Smoke for approximately 5 hours, or until the internal temperature reaches 195°F (90°C).

While the ribs are smoking, prepare the cherry glaze by combining cherry preserves, water, and fresh cherries in a saucepan over medium heat. Stir until the preserves melt and the mixture thickens, about 10-15 minutes.
