Rich and tender beef short ribs, smoked low and slow until they are melt-in-your-mouth delicious.

Ingredients

  • 4 pounds beef short ribs
  • 2 tablespoons salt
  • 1 tablespoon black pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon smoked paprika
  • 1 tablespoon onion powder
  • 2 tablespoons brown sugar
  • 1 cup apple cider vinegar
  • 1 cup beef broth
  • 2 cups wood chips (hickory or oak)

    Prepare the beef short ribs by trimming excess fat, leaving about 1/4 inch for flavor.

    In a bowl, mix together salt, black pepper, garlic powder, smoked paprika, onion powder, and brown sugar.

    Rub the spice mixture generously over all sides of the short ribs, ensuring they are evenly coated.

    Wrap the seasoned ribs in plastic wrap and refrigerate for at least 4 hours, preferably overnight for maximum flavor.

    Soak the wood chips in water for at least 30 minutes before smoking.

    Preheat your smoker to 225°F (107°C). Add the soaked wood chips to the smoker.

    Place the short ribs bone-side down on the smoker rack.

    Smoke the ribs for 5-6 hours, maintaining a temperature of 225°F (107°C), until they reach an internal temperature of 203°F (95°C).

    During the last hour of smoking, mix apple cider vinegar and beef broth in a spray bottle and spritz the ribs every 30 minutes.

    Once the ribs are done, remove them from the smoker and let them rest for 30 minutes before slicing.
