Instructions
- 1
Prepare the beef ribs by trimming excess fat and removing the membrane from the back.
- 2
In a bowl, combine brown sugar, paprika, black pepper, garlic powder, onion powder, cayenne pepper, and salt to create the Texas rub.
- 3
Rub the mustard evenly over the beef ribs to help the seasoning stick, then generously apply the Texas rub on all sides of the ribs.
- 4
Wrap the seasoned ribs in plastic wrap and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to penetrate.
- 5
Preheat your smoker to 225°F (107°C).
- 6
Once the smoker is ready, add wood chips of your choice (hickory or oak works great) and place the ribs bone-side down on the smoker rack.
- 7
Smoke the ribs for approximately 5 to 6 hours, or until the internal temperature reaches 203°F (95°C) for tender meat.
- 8
During the last hour of smoking, mix apple cider vinegar and water in a spray bottle and mist the ribs every 30 minutes to keep them moist.
- 9
Once done, remove the ribs from the smoker and let them rest for 15-20 minutes before slicing.
- 10
Slice the ribs between the bones and serve with your favorite BBQ sauce and sides.
