Crispy fried chicken cutlets served with potato salad or bread, a beloved Czech dish.
Ingredients
- 1 pound chicken breast
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 cup all-purpose flour
- 2 large eggs
- 2 cups breadcrumbs
- 2 cups vegetable oil
- 2 pieces lemon wedges
- 2 tablespoons fresh parsley

Prepare the chicken by slicing the chicken breast into thin cutlets, about 1/2 inch thick. Place them between two sheets of plastic wrap and gently pound them to an even thickness.

Season the chicken cutlets on both sides with salt and black pepper. Let them rest for about 10 minutes to absorb the flavors.

Set up a breading station: In one shallow dish, place the flour. In a second dish, beat the eggs. In a third dish, place the breadcrumbs.

Dredge each chicken cutlet in flour, shaking off the excess, then dip it into the beaten eggs, and finally coat it with breadcrumbs, pressing lightly to adhere.

In a large skillet, heat the vegetable oil over medium-high heat until shimmering, about 350°F (175°C).

Carefully add the breaded chicken cutlets to the hot oil, cooking in batches if necessary to avoid overcrowding. Fry for about 4-5 minutes on each side, or until golden brown and cooked through (internal temperature should reach 165°F or 74°C).

Once cooked, use a slotted spoon to transfer the cutlets to a paper towel-lined plate to drain excess oil.
