
Simmered Daikon with Soy Sauce (大根の煮物)
Tender daikon radish slices simmered in a savory soy sauce broth, a comforting side dish.
Ingredients
- 1 medium daikon radish
- 1 cup soy sauce
- 2 cups dashi stock
- 1 tablespoon mirin
- 1 tablespoon sugar
- 2 stalks green onions
- 1 cup water
- 1 teaspoon sesame oil

Peel the daikon radish and cut it into 1/2-inch thick half-moons.

In a large pot, heat 1 teaspoon of sesame oil over medium heat.

Add the daikon slices to the pot and sauté for about 3-4 minutes until slightly translucent.

Pour in 2 cups of dashi stock and 1 cup of water, and bring to a boil.

Once boiling, reduce the heat to low and add 1 cup of soy sauce, 1 tablespoon of mirin, and 1 tablespoon of sugar.

Cover the pot and let it simmer for 20-25 minutes, or until the daikon is tender.

While the daikon is simmering, chop the green onions into thin slices for garnish.

Once the daikon is tender, remove the pot from heat and let it cool slightly.
