A Southern favorite featuring sautéed shrimp in a creamy sauce served over cheesy grits.

Ingredients

  • 1 pound shrimp
  • 1 cup grits
  • 1 cup cheddar cheese
  • 4 tablespoons butter
  • 3 cloves garlic
  • 4 stalks green onions
  • 4 slices bacon
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon lemon juice

    In a medium saucepan, bring 3 cups of chicken broth to a boil over medium-high heat.

    Once boiling, add 1 cup of grits and reduce heat to low. Stir occasionally for about 20-25 minutes until thickened.

    While the grits are cooking, cook 4 slices of bacon in a large skillet over medium heat until crispy, about 5-7 minutes. Remove bacon and set aside, leaving the drippings in the skillet.

    In the same skillet, add 4 tablespoons of butter and melt over medium heat. Add 3 minced garlic cloves and sauté for 1-2 minutes until fragrant.

    Add 1 pound of peeled and deveined shrimp to the skillet. Season with 1 teaspoon of paprika, 1 teaspoon of salt, and 1 teaspoon of black pepper. Cook for 3-4 minutes until shrimp are pink and opaque.

    Stir in 1 cup of heavy cream and 1 tablespoon of lemon juice. Cook for an additional 2-3 minutes until the sauce thickens slightly.

    Once the grits are cooked, stir in 1 cup of shredded cheddar cheese until melted and creamy. Adjust seasoning with salt and pepper if needed.

    Chop the cooked bacon and 4 stalks of green onions. Stir half of the green onions into the shrimp mixture.

    To serve, spoon the cheesy grits onto plates and top with the shrimp mixture. Garnish with the remaining green onions and chopped bacon.
