Ingredients

  • 1 pound lamb mince
  • 2 pounds potatoes
  • 2 medium carrots
  • 1 cup peas
  • 1 medium onion
  • 1 cup beef stock
  • 2 cloves garlic
  • 2 tablespoons olive oil
  • 4 tablespoons butter
  • 1 cup milk
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon thyme
  • 1 cup cheddar cheese

    Preheat your oven to 400°F (200°C).

    Peel and chop the potatoes into even chunks. Place them in a pot of salted water and bring to a boil. Cook for about 15-20 minutes or until fork-tender.

    While the potatoes are cooking, heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic, sautéing for about 3-4 minutes until softened.

    Add the minced lamb to the skillet. Cook for about 5-7 minutes, breaking it apart with a spatula, until browned.

    Stir in the diced carrots, peas, thyme, salt, and black pepper. Pour in the beef stock and let it simmer for about 10 minutes, allowing the flavors to meld.

    Once the potatoes are cooked, drain them and return them to the pot. Add 4 tablespoons of butter and 1 cup of milk. Mash until smooth and creamy. Season with salt to taste.

    Spread the lamb mixture evenly in a baking dish. Top with the creamy mashed potatoes, smoothing them out with a spatula. Optional: sprinkle 1 cup of shredded cheddar cheese on top.
