Oven-baked mackerel seasoned with herbs and lemon, delivering a flavorful and healthy dish.
Ingredients
- 2 whole mackerel
- 1 large lemon
- 3 tablespoons olive oil
- 2 teaspoons rosemary
- 3 cloves garlic
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 tablespoons fresh parsley
- 1 cup white wine

Instructions

Preheat your oven to 400°F (200°C).

Clean the mackerel by removing the innards and rinsing it under cold water. Pat dry with paper towels.

In a small bowl, mix together the olive oil, minced garlic, rosemary, salt, and black pepper.

Slice the lemon into thin rounds. Place half of the lemon slices inside the cavity of each mackerel.

Rub the olive oil mixture all over the outside and inside of the mackerel.

Place the mackerel in a baking dish. Arrange the remaining lemon slices on top of the fish.

Pour the white wine into the baking dish around the mackerel.

Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.

After 20 minutes, remove the foil and bake for an additional 10-15 minutes, or until the fish is cooked through and flakes easily with a fork.

Remove from the oven and sprinkle chopped fresh parsley over the mackerel before serving.

Serve the mackerel with the pan juices and additional lemon wedges on the side.
