Scotch Pancakes with Maple Syrup
Fluffy Scotch pancakes served warm with a drizzle of maple syrup for a sweet breakfast treat.
Ingredients
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- 3 4 ounces milk
- 1 large egg
- 2 tablespoons granulated sugar
- 1 pinch salt
- 2 tablespoons butter
- 1 cup maple syrup
- 1 cup fresh fruit (optional)

In a mixing bowl, combine 1 cup of all-purpose flour, 2 teaspoons of baking powder, 2 tablespoons of granulated sugar, and a pinch of salt. Whisk together until well combined.

In a separate bowl, beat 1 large egg and then add 3/4 cup of milk. Whisk until smooth.

Pour the wet ingredients into the dry ingredients. Stir gently until just combined; do not overmix. The batter should be slightly lumpy.

Heat a non-stick skillet or griddle over medium heat (about 350°F). Add 1 tablespoon of butter and let it melt, coating the surface.

For each pancake, pour about 1/4 cup of batter onto the skillet. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.

Flip the pancakes and cook for an additional 1-2 minutes until golden brown and cooked through. Transfer to a plate and keep warm.

Repeat the process with the remaining batter, adding more butter to the skillet as needed.
