Schinken und Eiersalat
A creamy salad made with ham and boiled eggs, often served on bread or with fresh rolls. This German breakfast dish is perfect for a hearty start to your day.
Ingredients
- 8 oz ham
- 4 large eggs
- 1 cup mayonnaise
- 2 tbsp mustard
- 2 tbsp chives
- 1 tsp salt
- 1 tsp black pepper
- 1 tbsp lemon juice
- 4 pieces bread rolls

Place the eggs in a saucepan and cover them with cold water. Bring to a boil over medium-high heat.

Once boiling, cover the saucepan and remove it from heat. Let the eggs sit in hot water for 10-12 minutes.

After the time is up, transfer the eggs to a bowl of ice water to cool for about 5 minutes.

While the eggs are cooling, chop the ham into small cubes.

In a large mixing bowl, combine the mayonnaise, mustard, lemon juice, salt, and black pepper. Mix well until smooth.

Peel the cooled eggs and chop them into small pieces. Add them to the mixing bowl with the dressing.

Add the chopped ham and chives to the bowl. Gently fold all the ingredients together until well combined.

Taste and adjust seasoning if necessary, adding more salt or pepper as desired.

Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld.
