Schinken und Eierpfanne
A hearty skillet dish with ham and eggs, perfect for starting the day with energy.
Ingredients
- 8 oz ham
- 8 large eggs
- 4 medium potatoes
- 1 medium onion
- 1 cup cheese
- 1 teaspoon pepper
- 2 tablespoons olive oil
- 1 teaspoon salt
- 2 tablespoons parsley

Wash and peel the potatoes. Cut them into small cubes (about 1/2 inch).

In a large skillet, heat 2 tablespoons of olive oil over medium heat.

Add the cubed potatoes to the skillet and season with 1 teaspoon of salt. Cook for about 10 minutes, stirring occasionally, until they are golden brown and tender.

While the potatoes are cooking, chop the onion and ham into small pieces.

Once the potatoes are cooked, add the chopped onion and ham to the skillet. Cook for an additional 5 minutes, stirring frequently, until the onion is translucent.

In a bowl, crack the 8 large eggs and whisk them together with 1 teaspoon of pepper.

Pour the egg mixture over the potato, onion, and ham mixture in the skillet. Reduce the heat to low and cover the skillet. Cook for about 5-7 minutes, or until the eggs are set.

Sprinkle 1 cup of cheese on top of the dish and cover again until the cheese is melted, about 2-3 minutes.

Remove from heat and garnish with chopped parsley before serving.
