Savory Mushroom and Spinach Quesadillas
Melted vegan cheese with sautéed mushrooms and fresh spinach tucked between crispy tortillas.
Ingredients
- 8 oz mushrooms
- 4 cups spinach
- 1 cup vegan cheese
- 4 large tortillas
- 1 medium onion
- 2 cloves garlic
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon cumin
- 1 teaspoon red pepper flakes
- 1 tablespoon fresh cilantro

Prepare the ingredients: Clean and slice the mushrooms, chop the onion, and mince the garlic.

In a large skillet, heat 2 tablespoons of olive oil over medium heat.

Add the chopped onion to the skillet and sauté for about 3-4 minutes until translucent.

Add the minced garlic and sliced mushrooms to the skillet, cooking for an additional 5-7 minutes until the mushrooms are tender.

Stir in the spinach, salt, black pepper, cumin, and red pepper flakes. Cook for another 2-3 minutes until the spinach is wilted.

Remove the skillet from heat and let the mixture cool slightly. Stir in the fresh cilantro.

Heat a separate non-stick skillet over medium heat. Place one tortilla in the skillet.

On one half of the tortilla, layer 1/4 cup of vegan cheese and 1/4 of the mushroom-spinach mixture.

Fold the tortilla over to cover the filling and cook for 3-4 minutes on each side until golden brown and the cheese is melted.

Repeat with the remaining tortillas and filling.

Cut the quesadillas into wedges and serve warm with your favorite salsa or guacamole.
