Sautéed Zucchini Noodles with Chipotle Sauce
Spiralized zucchini noodles tossed in a smoky chipotle sauce, offering a light yet satisfying meal.
Ingredients
- 2 medium zucchini
- 2 peppers chipotle peppers in adobo sauce
- 1 cup tomato sauce
- 3 cloves garlic
- 2 tablespoons olive oil
- 1 whole lime
- 1 bunch cilantro
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 tablespoons nutritional yeast

Spiralize the zucchini using a spiralizer or a vegetable peeler to create noodles. Set aside.

In a blender, combine the chipotle peppers, tomato sauce, minced garlic, juice of half the lime, salt, and black pepper. Blend until smooth.

Heat olive oil in a large skillet over medium heat. Once hot, add the zucchini noodles and sauté for 2-3 minutes until just tender.

Pour the chipotle sauce over the sautéed zucchini noodles, and toss to coat evenly. Cook for an additional 2-3 minutes until heated through.

Remove from heat and stir in nutritional yeast for a cheesy flavor. Adjust seasoning with more salt and pepper if needed.
