Grilled sardines seasoned simply with salt, a traditional dish from the coastal regions of Spain. Perfect for a light lunch.

Ingredients

  • 12 whole sardines
  • 1 teaspoon salt
  • 2 tablespoons olive oil
  • 1 whole lemon
  • 1 bunch fresh parsley
  • 2 cloves garlic
  • 1 teaspoon black pepper
  • 1 teaspoon sea salt

Instructions

    Preheat the grill or grill pan over medium-high heat (about 400°F).

    Clean the sardines by removing the scales and innards if not already prepared. Rinse under cold water and pat dry with paper towels.

    In a small bowl, mix the olive oil, minced garlic, black pepper, and sea salt to create a marinade.

    Brush the sardines with the marinade on both sides. Allow them to marinate for 10-15 minutes.

    Once the grill is hot, place the sardines directly on the grill. Grill for about 3-4 minutes on each side until they are cooked through and have nice grill marks.

    While the sardines are grilling, cut the lemon into wedges for serving and chop the fresh parsley.

    Once the sardines are done, remove them from the grill and place them on a serving platter. Garnish with chopped parsley and serve with lemon wedges.
