Tender lamb cooked in a fragrant blend of spices and yogurt, a signature dish from Kashmir.

Ingredients

  • 2 pounds lamb
  • 1 cup yogurt
  • 2 medium onion
  • 2 tablespoons ginger
  • 4 cloves garlic
  • 1 stick cinnamon stick
  • 6 pods green cardamom pods
  • 4 whole cloves
  • 1 tablespoon ground cumin
  • 1 tablespoon ground coriander
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 4 tablespoons vegetable oil
  • 1 teaspoon salt
  • 1.5 cups water
  • 1 bunch fresh cilantro

Instructions

    Cut the lamb into 1.5-inch cubes and set aside.

    In a large bowl, mix the yogurt, ground cumin, ground coriander, turmeric powder, red chili powder, and salt. Add the lamb cubes and marinate for at least 1 hour, preferably overnight in the refrigerator.

    Finely chop the onions, garlic, and ginger.

    In a large heavy-bottomed pot or Dutch oven, heat the vegetable oil over medium heat. Add the cinnamon stick, cardamom pods, and cloves; sauté for 1-2 minutes until fragrant.

    Add the chopped onions to the pot and cook for 8-10 minutes, stirring occasionally, until they turn golden brown.

    Stir in the garlic and ginger, cooking for an additional 2-3 minutes until aromatic.

    Add the marinated lamb along with all the marinade to the pot. Cook for 5-7 minutes, stirring frequently until the lamb is browned on all sides.

    Pour in the water, bring to a boil, then reduce the heat to low. Cover and simmer for 1.5 to 2 hours, or until the lamb is tender, stirring occasionally.

    Once the lamb is tender, taste and adjust seasoning if necessary. Remove from heat.

    Garnish with chopped fresh cilantro before serving.

    Serve hot with steamed basmati rice or naan.
